Happiness


Welcome to Chicken week! We've been having some great sales on chicken lately and each time I see a good deal, I buy a bunch and throw them in the freezer. Until this weekend when I realized my entire freezer is packed with chicken. Time to use it up! So there'll be a lot of chicken recipes this week.

And just to give you a little heads up....it's October, and therefore fire season here in San Diego. They started last week, but today there were no less than 5 fires reported throughout the day today. Because of this, there have been evacuations and power outages, so I can't guarantee reliable internet access over the next few weeks. Think wet thoughts for me.


Baked Curry Chicken
  • 1 chicken breast
  • 1/4 cup honey
  • 2 tsp mustard
  • 2 Tbsp soy sauce
  • 1/2 tsp curry powder
  1. Preheat oven to 350. Mix honey, mustard, soy sauce, and curry powder in shallow bowl.
  2. Dip chicken in sauce and coat well. Place on foil lined pan.
  3. Bake for 30 minutes. Flip and bake another 20 minutes or until chicken is done.
Serves 2.

Total Fat 1.7 g
Total Carbohydrate 36.8 g
Protein 28.6 g

  9. i'll add you to my "good thoughts" list this fire season. my bestie was evacuated during both of the big fires in SD over the past few years and now that we're living next to the mountains, i'm just praying that everything stays peachy up my way, too.
