Girls Night In



Last night Liz hosted a book get-together at her lovely home. Book get-togethers are great because its not only a great place to get free books, but its a great place to learn about books you may like, and its a great place to see your friends. This is especially true for me, who hasn't seen a lot of the girls who attended in months.

Liz made one of her fantab pies, naturally. I brought a Mediterranean salad and Kate's Summer Kiss, which I may rename "the date rape drink" since it seemed to take most of the girls there by surprise when their legs got knocked out from under them. I have a big problem with making my Mediterranean salad, which is that I love fresh mozzarella, so of course I loooooove eating it as I make it. I always have to make sure I have extra mozzarella on hand so there's enough for the salad itself.

I loved catching up with the girls. It was so much fun to see them and there was plenty of drinking, eating, and talking to carry us through the night. I came away with two new books - Speechless and The Thirteenth Tale, which will be great reading material in Puerto Vallarta. And of course, I came away with some great gossip, which is, of course, the only reason I wanted to go in the first place.

Mediterranean Salad
1 lb fresh boccini mozzarella, cut into chunks
2 large tomatoes, chopped
1 jar roasted red peppers
1/4 cup chopped basil
1/2 cup basalmic vinaigrette
salt and pepper to taste

1) Combine all ingredients in large bowl
2) Chill for 30 minutes, or until ready to serve
