I had the coolest second grade teacher. After we finished each book, we'd have a party. After we finished "Justin Morgan had a horse" she brought us to the stable to ride her horse, Arabian Eric. And one day she came in and announced to the class it was Green Eggs and Ham day. I don't remember what the occasion was. We were far past Green Eggs and Ham in our reading comprehension. All I do know, is I will never forget eating Green Eggs and Ham with one of my favorite teachers and her instilling in all of us the love of reading.
Honestly, I don't think I've had Eggs and Ham since that day. I mean I've had them separately, but not combined. And this morning when we woke up early so Thatboy could bring his car to the shop I thought it would make a fun breakfast. Since I'm no longer seven, I didn't have to make it green this time - although I did add some green onions...that kinda counts right? I'll check with Sam I Am.
Ham and Eggs
- 7 oz ham, sliced
- 1 Tbsp butter
- 3 eggs, lightly beaten
- 1 cup corn
- 1 green onion, sliced
- In a skillet over high heat, brown ham in butter until browned on both sides.
- Combine eggs, corn, and green onion and pour over ham.
- Lower heat and cook, scrambling eggs, until done to your liking.
This is really random, but I hate eggs in general except boiled.
