Everything seems to be right


Today has been a good day. Thatboy and I got up and headed to our local polling place. In the pouring rain. 15 minutes later we were on our way to work. A good omen, if you ask me. Work went as smoothly as could be and I headed home to hit the gym with Thatboy - tonight, dinner didn't burn. Another good omen. Then we settled in to watch the election results. While all the propositions for California haven't been totaled yet, there was something undeniably exciting about watching history in the making. A moment we will forever be able to tell our children and grandchildren about. A moment where we could finally prove Tupac wrong.

Tonight was not a night I wanted to be stuck in the kitchen, craning to see the television from the stove. While the last meatloaf I made was good, it took a looooong time to make. I wanted something quicker so I reverted back to an old school recipe - all beef meatloaf, which Thatboy has declared his favorite type of meatloaf (although I did get grief for using bread instead of cornflakes....I don't do cornflakes...)


Mushroom Meatloaf for Two
  • 1 egg
  • 1/8 cup milk
  • 1 slice of bread, crumbled
  • 1/2 lb ground beef
  • 4 oz can mushrooms
  • 1/2 bag of onion soup mix
  • 2 squirts of ketchup
  1. Preheat oven to 350. In medium bowl, whisk egg.
  2. Add milk and bread and stir well.
  3. Add beef, mushrooms, onion soup mix, and ketchup and stir well.
  4. Place in oven safe baking dish and shape into a loaf. Cook for 40 minutes.
Serves 2.

  6. Meatloaf was the way to go - now why didn't I think of that??? I opened a bottle of red wine and stayed glued to the set. I really think that election was one of America's finest hours (well, many hours). Both speaches were incredible. McCain was particularly gracious.
