1/4 lb fresh shrimp, peeled and deveined
1 Tbsp olive oil
1 tsp lemon pepper
Baby spinach
sliced red onion
1 can mandarin oranges.
1) Preheat oven to 450. Toss shrimp with olive oil and lemon pepper and place on a baking sheet.
2) Cook for 9 minutes. While cooking, combine spinach, onion, and oranges.
3) Place hot shrimp on top of salad, drizzle with dressing.
Serves 2.

Shrimp is something I need to try a bit more, the only time I have it is if someone else had ordered some in a restaurant!

ReplyDeleteI don't know if I should admit this... but I have never eaten shrimp. I love fish but have this thing about shrimp... like it seems odd to even try. But this is my childhood, unable to control my chaotic childhood, so I controlled what I ate.
