This weekend we got so much done I can't help but be impressed. It's the only weekend we really have to get as much done as possible because the giant ball? It's at the top of the hill and starting to roll down.
It started on Friday which I will rename "Thatgirl in the Kitchen"day. See, one of our weekend plans was to visit H and her brand spanking new little man. And I hate showing up empty handed. So I made an egg and bell pepper strata:

Saturday we woke up early and ran a million errands. We picked up just about everything we needed for Thatbaby's arrival. We now have a crib, complete with bedding AND a mattress (ever so important for sleeping), a dresser/changer, stroller, and car seat. Now we're officially ready.
We also picked up everything we needed for our new place, including a new television and giant bookshelf.
And then we went to visit the new baby. Who is SO tiny! So tiny, in fact, that I turned to Thatboy and reminded him that he was never that tiny, being born over 2lbs heavier than this little guy is, a week and a half after leaving the hospital.
And H and Mr. H are doing well. They seem like such natural parents, which is always comforting to see. Not that I had any doubts, of course.
Thatmom was down for the weekend, so we headed to Blind Lady Ale House for dinner. Thatmom does love her pizza. And this is pretty good pizza. Not as good as our favorite, but nice for a change.
Sunday we were tasked with bringing the items we purchased inside from the car. Which apparently I'm no longer qualified to do, according to Thatboy. So one of his friends came over to do some manly lifting. And I rewarded the good Samaritan with a batch of chocolate brownies. After, the boys hit the water, and I hit the mall and supermarket. I picked up some presents for parties and weddings, food for the week, and a little present for Thatboy for no reason whatsoever.
And yet, even with running all those errands, I still got home before Thatboy. So I started on dinner. He came home and got right to work on putting together everything we had picked up this weekend. A hard day's work deserves a nice filling meal. Chicken, breaded and baked was always a staple growing up, so it's a fall back for me. I use lots of different mediums to coat the chicken - yogurt, honey, this time it's mustard. Served with some of summer's best produce, it's a great way to end a very busy weekend.

Mustard Chicken
1 chicken, quartered
4 Tbsp butter
1 Tbsp mustard
1 Tbsp vinegar
1/2 tsp salt
1/2 tsp paprika
1 cup bread crumbs
- Preheat oven to 375. Mix the butter, mustard, vinegar, salt, and paprika. Rub the over the chicken and place in shallow baking dish.
- Sprinkle with crumbs and bake 40 minutes.
Oh my goodness. You are a good good friend and cook. Those meals look amazing. Such a treat for new parents.

ReplyDeleteWow! You have been a busy girl! Hey, I think you mentioned way back that Thatmom lives in OC. Have any of Thatfam tried a Il Dolce in Costa Mesa for pizza? A friend just told me about it and said it was fab.
