A top-notch affair


THIS is the good dish. And really, you only need to look at it to see why. Impossibly thin noodles covered in fresh tomatoes and basil - fresh produce really needs nothing else. And we are definitely moving towards the end of summer, so I've got to get in these sauce-less pasta dishes for as long as I can. Along with the sweet fresh tomatoes which won't be nearly as good next month. This dish more than made up for the failed stuffed tomatoes. It was light and filling and perfect for a late summer's night. And despite what the weather gods may think, it is still summer for at least another week.

If you're looking for a really easy dinner to entertain company then this is a recipe to bookmark. Don't tell him, but I'd probably trust Thatboy to make this dish on his own, and we all know my feelings about allowing him in my kitchen.

Cappelini with Tomatoes and Basil
1/4 cup olive oil
1 lb cherry tomatoes, quartered
1/2 cup basil, chiffonade
1/2 lb cappellini
Combine olive oil, tomatoes, basil, and salt and pepper to taste.
Cook pasta according to directions.
Toss with tomato mixture.

Serves 3-4.

  4. Looks delicious. I have a weak spot for capellini. You would think that it would just taste like a thin spaghetti, but somehow it's different.

    This would make a great submission to Presto Pasta Nights.
