Under an August moon burnin' above



There's something magical about August, 2 years ago in August Thatboy and I told all our family and friends that we'd share bank accounts, health insurance, and a last name. Last August I celebrated being done with the test from hell and Thatdog came into our lives. There's just something about August that makes Thatboy sweeter. So I guess I shouldn't have been too surprised when I was awoken with a kiss this morning and a declaration of "Happy Anniversary Month!" Or when I served him a salad for dinner and he raved about it all night long. "This is the best salad. I love this salad. When are you going to make this salad again? This is my favorite salad you've made. No I'm serious, this is a really good salad." It must be August.


"Good Fat" Cobb Salad
  • romaine lettuce
  • nonfat ranch dressing
  • 1 chicken breast, cooked, diced
  • 1 tomato, diced
  • 1 avocado, cubed
  • 1 hardboiled egg, chopped
  • sliced almonds
  1. Toss lettuce with ranch dressing and place on plates.
  2. Top with chicken, tomatoes, and avocado.
  3. Sprinkle with egg and almond accents.
Serves 2.
