Contented to Charm

The first time I tried to make tortilla bowls I royally screwed up. I didn't really understand the directions and they came out really weird. I have since very nearly perfected the art of the tortilla bowl, and making it at home is a hundred times healthier than those tortilla bowls you get at a restaurant that are deep fried. Now as I think I've mentioned before, these still aren't very healthy because the amount of fat in a flour tortilla, but if you're looking for a cute presentation tortilla bowls are definitely the way to go. You can pretty much serve anything in tortillas bowls (though I don't recommend soup). I served some easy chicken and rice in mine.

Chicken and Rice in Tortilla Bowls
1 Tbsp oil
1/2 green bell pepper, sliced
1/2 onion, sliced
1/2 pkg taco seasoning
1/2 cup diced tomatoes
1/2 cup black beans
1 cup shredded chicken
1/4 cup water
1 cup cooked rice
2 flour tortillas

1) Preheat oven to 425. Press tortillas into oven safe bowls to form bowl shape. Bake 10 minutes or until edges are golden. Let cool in bowl.

2) Heat oil over medium-high heat and cook pepper and onion until tender.

3) Stir taco spices, tomatoes, black beans, chicken, water. Bring to a boil. Reduce heat to low and simmer 5 minutes.

4) Stir in rice and cook until heated through. Spoon into tortilla bowls.

  5. Oh cool! R would love this. I don't know if any of my bowls are oven safe though. Maybe have to invest in one.

  6. I'd never thought of just baking the tortillas a little bit and not frying them into bowls. What a great idea! Although, I do love fried flour tortillas so much...
