Cookie for Dimples


When I first started working for my current employer I was "on the floor." I didn't have an office, but was in a cubicle with the rest of the support staff. Which is how I got to know Dimples. See, of all the people "on the floor" Dimples had been there the longest. And Dimples knew how to work everything in the office. And Dimples never made me feel stupid for asking the hundred stupid questions I always had.

Here's something to always always always keep in mind. I don't care what your field or profession is, treat the support staff with the utmost kindness or success. I can't tell you how many times I've had my ass saved by the women I work with, Dimples included.

Unfortunately for us, and fortunately for her, Dimples decided it was time for her to move on. She told us she was moving to Arizona. I literally thought she was joking, but she wasn't. I couldn't believe she was leaving me to fend for myself!!!!!!!!! But I wanted to send her off right and Dimples like chocolate so chocolate chip cookies were in order. I was out of eggs, so they became shortbread cookies!


And special message to Dimples - it's been crazy the past two weeks. The Dimples replacement just isn't you and we miss you something terrible. I hope things are going well for you though!!!


Chocolate Chip Shortbread
1 cup butter, softened
1/2 cup brown sugar
1 tsp vanilla extract
2 cups whole wheat flour
1/4 cup cornstarch
1/2 cup chocolate chips
1 Tbsp sugar

1) Preheat oven to 300. Mix butter, brown sugar, and vanilla.
2) Blend in flour and corn starch.
3) Stir in chocolate chips.
4) Form into 1-inch balls and place on ungreased baking sheet. Dip bottom of small glass in sugar and press down on cookies to flatten.
5) Bake 25-30 minutes or until bottoms begin to brown. Cool and remove to a wire rack to coll completely.

  2. How nice that you gave Dimples such a sweet sendoff. If you want to adopot a "dimples", it could be me and I'll take cookies any time you want to send them (or me off)

  5. I adore shortbread. Good for you for sending her off right! Recognition and appreciation really matter when you're the bottom of the food chain.

  6. I work at a restaurant and I will never treat my "support staff" (ie, the bussers, runners, dishwashers...) with disrespect because my job would not be possible without their help. They are rockstars.
    Your send-off treats look so delicious.

  10. What a great thing to do! So sweet. I love chocolate chip shortbread too!

    We definitely shouldn't take anyone for granted though and always support each other as best we can... even if it is sending someone to the nearest "Dimples" cos we don't know! lol
